“Amaranth and sweet potato greens. Both are edible, delicious and usually overlooked food sources in the USA. Best part? They still produce their more commonly consumed grain and tubers just fine when you harvest their greens throughout the season. They taste similar to spinach when cooked—mild and soft on the palate.”
